Mix ground pork with mung bean sprouts, garlic chives, spinach, garlic, ginger. Add one whole egg. Season with salt, pepper, soy sauce, and sesame oil.


I made a duxelle from hen of the woods to use instead of pork as a filling for a vegetarian dumpling.




Teach the commis, Sandy and Jane, how to wrap the dumplings. Have a beer!
