barolo dinner, 2/18/08

My buddy Jason Wagner is an ace sommelier. He and Melissa invited Jane and I over to share a magnum bottle of Cannubi Barolo by Marchesi di Barolo, 2000. Jason and I collaborated on a winter menu to compliment this amazing bottle of wine.





The gracious hosts: Melissa and Jason.


































Tar and roses: yellowtail tuna with fennel, celery, and aged balsamico.
















Bagna cauda with sweet carrots, la ratte potatoes, tokyo turnips, red radishes and celery.
















Grinding.
























Zuppa di Fagioli di Lamon con Cavalo Nero. Don't be fooled because it looks like hell. The beans are very, very special -- grown in volcanic soil in the Veneto. If it's brown, hot, and tasty; it's my kind of food.












Whole roasted branzino stuffed with lemons and Tuscan fennel pollen.












Poached halibut with braised bamboo shoots, wood's ear fungus, scallions, and xiao xing broth.















Bone marrow risotto.

we had a damilano barolo that night as well. 2001 vintage if i remember correctly.
